The unit is held the moment it's in the cart.
Stock is reserved when a buyer commits and released if they walk. Two buyers can't sell the last medium twice. Wish lists let a buyer hold a spot on the front side before the store opens. The count the store shows is the count that's actually available, across every store selling from that stock. The hold length is yours to set, and an abandoned cart gives the unit back on its own. For a pop-up or a fundraiser with a fixed run, this is how you never oversell the last size.
